SIMPLE VEGAN CHOCOLATE CAKE

An easy peasy no egg, no milk and no butter chocolate cake! It takes under 45 mins to whip up, using a bowl, a fork and, of course, the loaf pan (Or, you could choose to mix everything in the cake pan so you'll have 1 less thing to wash haha!). LO got to enjoy the taste of chocolate for the very first time :D. She seemed to like this more than the banana walnut cake (The recipe for the banana walnut cake is here) that I made previously... Guess most people just love chocolate, eh? ^^


You can also decorate it with berries, ganache or frosting.
It's chocolatey, moist and quite tasty.

Ingredients:


  • 1 1/2 cup all purpose flour 
  • 3 tbsp cocoa powder 
  • 1 tsp baking powder 
  • 3/4 cup castor sugar (Originally 1 cup of granulated sugar)
  • 1 tsp white vinegar 
  • 5 tbsp vegetable oil (I used sunflower oil)
  • 1 cup water
  • 1 tsp vanilla extract (Optional. I didn't use)
  • Some icing sugar, for garnishing (Optional)


  1. Preheat oven to 170°C and line a one pound (8.5 x 4.5-inch) loaf pan with baking sheet.
  2. In a large bowl, mix all dry ingredients together.
  3. Add in white vinegar, oil and water (and vanilla extract, if using). Stir til well combined. 
    Stir til well combined.
  4. Pour batter into the prepared loaf pan and bake in preheated oven for about 30-35 mins, or til fully cooked. Test with a skewer and if it comes out clean, it's done.

Tong sui are a Cantonese specialty. If you've grown up in a Cantonese family, you must have had tong sui before. The term 'tong sui' literally means 'sugar water'. It is a collective term for any sweet, warm soup or custard served as a dessert at the end of a meal in Cantonese cuisine. LOTUS ROOT SOUP V BLACK BEANS, WALNUTS & LOTUS SEEDS

My all time favorite: lotus root! This soup is said to be suitable for those with weak 'qi' & blood and blurry vision. It's also suitable to be taken during the confinement period as black beans can help replenish blood, promote secretion of breast milk and brighten eyesight. Yummy and nutritious. Ingredients: Approx 600g lotus root, washed and cut into pieces 1 tael (Approx 37.5g) black bean 1 tael (Approx 37.5g) walnut 5 maces (Approx 18.9g) lotus seed 5 maces (Approx 18.9g) dried longan  5 red dates, pits removed Approx 300g pork bones (For confinement, replace with 1 black-bone chicken) 2500ml water Scald pork bones in boiling water for 5 mins. Remove, rinse and set aside. Rinse and drain black beans. Heat a wok and fry the black beans without oil til the skin cracks. Set aside. Rinse remaining ingredients and set aside.
