Fast and easy recipe. Instead of deep-frying, I flattened and pan-fried them, so they turned out looking like patties.
Ingredients:
- 20g cooked edamame (weight of peas only)
 - 10g yellow onion, finely chopped
 - 1/4 large potato, boiled and mashed
 - 10g cheddar cheese, grated
 - Some cornstarch
 - Some bread crumbs v Italian herbs
 - Heinz spinach noodles, cooked, with any soup base you like (I used ABC soup)
 - Oil, for pan frying
 
- Combine edamame, mashed potatoes, onion, cheese and cornstarch. Shape into mini balls and flatten them slightly. 
Shape into mini balls and flatten them.  - Coat each croquette with bread crumbs.
 - Heat oil and pan-fry the croquettes til golden brown.
 - Drain well and serve with Heinz spinach noodles and soup.
