Meant to make these earlier but had been kinda busy and then LO wasn't feeling too well. Since she's better already and her appetite improved quite a bit today, compared to the past few days, I decided to make these cranberry cookies for afternoon teatime. The reason I chose this recipe was because it is one of the very few that uses fresh cranberries (The rest mostly uses dried ones), and it looked simple enough :P. These moist cake-like cookies with lotsa finely chopped fresh cranberries are simply delicious! If you are a cranberry lover, I'll highly recommend to try this recipe out. It's definitely a keeper and I'm thinking maybe next time I'll try adding some chocolate chips or chopped walnuts, just for some extra crunch :D

Ingredients:
(Makes 12 cookies)- 50g unsalted butter, softened
- 1/2 cup brown sugar
- 1/2 cup all purpose flour
- 1/2 tsp baking powder
- 3/4 cup quick/steel cut oats
- 1/4 tsp ground cinnamon
- 1/2 an egg
- 1/8 cup fresh milk
- 1/2 tsp fresh orange zest
- 1/2 cup frozen cranberries, thawed and finely chopped
- Preheat oven to 170°C and line a baking tray with baking paper.
- Cream butter and sugar. Add in all the rest of the ingredients, except cranberries, and mix well.
- Gently fold in the chopped cranberries. Drop by tablespoonfuls onto the prepared tray.
- Bake in preheated oven for about 8-10 mins, or til the rims of the cookies are lightly browned. Don't overbake or they will be hard and dry. Let cool on wire rack, or simply eat them when they are still slightly warm :D
