4-INGREDIENT BLUEBERRY AND BANANA MUFFINS

I'm always looking for simple recipes with very few steps and ingredients that will still give good (or, at least, acceptable) results. Lesser steps/ingredients = lesser time spent in the kitchen, which is good since I'm a SAHM with no helper. Here's another one of those simple recipes that's full of goodness: blueberry and banana muffins with only 4 ingredients! These muffins are sugar free, making them a healthier choice for morning breakfast or afternoon snack, especially for kids.


Simple, healthy and sugar free.

Ingredients:


  • 1 banana, mashed
  • 1/2 cup fresh blueberries 
  • 1 cup self raising flour 
  • 3/4 cup milk 

*Optional: 1 tbsp lemon juice (Just to add a bit of lemony zing to the muffins)


  1. Preheat oven to 180°C.
  2. Lightly grease the muffin tray or line with paper cups.
  3. Sift flour into a bowl. Stir in milk and lemon juice (if adding) til combined and smooth.
  4. Add in banana and blueberries. Mix to combine.
    Mix to combine.
  5. Spoon mixture evenly into the muffin tray. 
    Spoon evenly into the paper cups.
  6. Bake in the preheated oven for 20-25 mins or til golden (Test with a toothpick. If it comes out clean, then it's fully cooked).
  7. Allow to cool before eating :D

*Tip: If you don't have self-raising flour at home, fret not. You can make your own SR flour with 3 simple ingredients:


  • 1 cup of all purpose flour 
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt

Whisk all ingredients to combine.

Measurements are to equal each cup of SR flour.

  1. Followed your banana blueberry muffin recipe and it turned like kueh texture but it tasted good and would like to try it again. Any tips?

  2. Perhaps the batter was a little too wet or the muffins were slightly undercooked. Maybe you can try using slightly lesser milk/slightly more flour, or baking them for a little longer. Also, make sure your oven is hot enough before putting them in (Note: Temperatures may vary for different ovens, so adjust according to your oven) :)

  3. I baked them for ard 35mins. Next round will reduce the milk. Thanks. :)

Tong sui are a Cantonese specialty. If you've grown up in a Cantonese family, you must have had tong sui before. The term 'tong sui' literally means 'sugar water'. CHINESE ARROWROOT SOUP WITH PORK BONES

This is the simple version of the Chinese arrowroot soup (Also known as 粉葛湯 'Fun Kot Tong' in Cantonese). Our family love drinking this soup. It is tasty and cooking it with pork bones and dried squid makes it sweet and refreshing. Some people who like boiling arrowroot together with lotus roots or peanuts, and my mother-in-law usually boils it on its own and drink as 'cooling' tea. Naturally sweet and tasty. If you don't like seafood, you can choose to omit the dried squid. This is how the Chinese arrowroot looks like.  The arrowroot is a type of root plant similar to taro, potato or tapioca.
