Only 2 ingredients but takes a bit of work and time, OR, you could opt to use those ready-made apple juice in cartons. Not only will that help you save work and time, they are also more 'yellowish' in color, which makes them more similar to the real beer. In order to avoid any added sugar, preservatives, artificial flavoring and coloring, I chose to make my own juice and then use the mush to make applesauce for other recipes :D

Ingredients:
- 4 red gala apples, stems and cores removed
- 1 3/4 tsp agar agar powder
- Cut the apples into slices. There is no need to peel them.
- Put the apple slices into a pot and add enough water to just cover them. Too much water and you’ll have pretty diluted juice. The juice may come out a bit strong, but it’s a lot easier to dilute the juice with extra water rather than trying to make the flavor stronger.
Add just enough water to cover them. - Heat pot over medium fire and bring the water to a boil. Turn to low fire and slowly boil the apples for about 20-25 minutes or until the apples are quite soft.
- Slowly ladle the hot juice/apple mixture into the sieve and gently mash the apples. Strain the juice through the sieve for 3-4 times so that the apple mush will be left behind. Place the mush in a separate bowl for later.
- I managed to get about 1 3/4 cup of juice. Taste the juice after it’s cooled for a bit. You can add additional sugar, cinnamon or water, depending on your preferences. I left it as it is.
The color looks more like lychee juice :P - Add agar agar powder to the liquid and mix with a whisk. Bring the mixture to a boil. Turn to low heat and simmer for about 2-3 mins while stirring constantly til the powder is completely dissolved. Remove from heat.
- Let the mixture cool a bit before pouring into a glass or molds (Make sure to leave about 1/4 cup of jelly mixture to foam up and some room for foam, if you're making it).
- Put the glass/molds into the fridge. Check the remaining mixture. When it thickens, it is ready to be foamed up.
- When the mixture is ready, whisk it vigorously until it's all foam. Scoop the foam on top of the jelly in the glass and leave it in the fridge until set. Best served chilled :D
Tips:
- The rule of thumb: Use 1 tsp of agar agar powder to thicken 1 cup of liquid.
- You could place a coffee filter in your sieve so that juice will be filtered through the bottom to save some work. I didn't have the filter, so I strained the juice through the sieve for 3-4 times, in order to get as much mush out as possible.
- The apple mush can easily be turned into applesauce by placing in a blender and adding a smidgen of sugar and cinnamon. I left it unsweetened and since I'm freezing it for future use, I didn't add the ground cinnamon either because spices lose their flavor after freezing.
You can add spices to the sauce after you thaw it. - Keep in mind the homemade apple juice doesn't have any preservatives, so be sure to keep it refrigerated and to use it within a week!
