A simple recipe with very few steps and ingredients, yet it's absolutely yummy! Only thing needed is a bit of patience. The steaming part only takes about half an hour, but you would need to let it relax and sit for an hour or two, for the meat to absorb all the flavor from the marinade.


Ingredients:

(Serves 2)
  • 1 chicken whole leg
  • Approx. 1 tbsp of sea salt
  • Approx 2 tbsp of Chinese cooking wine (Shao Xing Hua Diao Jiu)
  • 1 tbsp of cooking oil




  1. Pat dry the cleaned chicken whole leg with paper towels.
  2. Add the salt and rub it in by gently massaging the whole leg. Make sure to coat the whole leg evenly and completely, including the folds and joints. Add in the wine and coat evenly. Lastly, rub in the cooking oil and let it rest uncovered for about an hour at room temperature.
  3. Prepare the steamer and bring the water to boil. Wrap the chicken whole leg in aluminium foil, without the liquid from marinade. I rubbed a pinch of salt onto the skin before wrapping it up.
  4. Steam on low heat for about 25 - 30 minutes, off the heat and let it sit in the steamer, covered, for another 5 minutes. Remove from steamer and at this point, you can choose to test a little bit of the meat and adjust the salt if necessary.
  5. Let it stand at room temperature for at least an hour before eating, if you can help it. :)








*You can choose to add ginger or scallions for more flavor during steaming.
