STUFFED ROAST CHICKEN WITH CHORIZO

My hubby is a fan of Gordon Ramsay; watching Gordon's videos, buying Gordon's cookbooks, trying out some of the recipes and he is even talking about growing his own herbs. I must admit I enjoy watching his videos too because he makes cooking look easy, his food looks absolutely scrumptious. When my parents said they were coming over for dinner on Christmas day, this stuffed roast chicken recipe popped up in my head almost immediately, simply because: Firstly, I've never cooked a turkey before, plus it's just too big for the 4 of us (didn't include my LO coz she can't eat it yet), and secondly, we already have most of the ingredients at home, just needed to get the chicken, thyme sprigs, chorizo and cannelini beans. So, here's the original Gordon Ramsay recipe:




Ingredients:

(Serves 4-6)


  • 1 free-range chicken, about 2kg
  • 1 lemon
  • Olive oil, for drizzling
  • 1 heaped tsp paprika (sweet or smoked, as preferred)
  • 400ml white wine

For the chorizo stuffing:


  •  Olive oil, for frying
  • 150-200g chorizo, skinned and cubed
  • 1 onion, peeled and finely chopped
  • 2 garlic cloves, peeled and finely sliced
  • Bunch of thyme sprigs
  • 2 x 400g tins cannelini beans, drained and rinsed
  • 200g semi-dried/sunblush tomatoes in oil
  • Sea salt and freshly ground black pepper


  1. Preheat the oven to 180°C/Gas 4.
  2. First make the stuffing. Heat a little olive oil in a large frying pan, add the chorizo and fry for about 3 minutes until turning golden. Add the onion and cook for a minute or two until softened, then add the garlic. Cook for a further couple of minutes before adding the leaves from 3 thyme sprigs. Stir in the cannellini beans, seasoning well. Cook for a minute or two to warm through. Add the tomatoes and a couple of tablespoons of the oil they are stored in. Stir to combine, then remove from the heat.
  3. Now prepare the chicken. Season the cavity with salt and pepper, then fill with the chorizo stuffing and place a whole lemon at the cavity opening, tucking any excess skin over it. Drizzle the chicken with olive oil, sprinkle over the paprika and season with salt and pepper. Rub into the chicken skin.
  4. Pour the wine and about 200ml of water into a roasting tray and season. Add the chicken and the remaining sprigs of thyme, then cover with foil and roast for 1 hour in the preheated oven.
  5. After 1 hour, remove the foil from the chicken, baste with the roasting juices and turn the oven up to 200°C/Gas 6. Roast for another 25–30 minutes until the skin is golden brown and the juices from the thigh run clear. Remove from the oven and rest for 15 minutes before serving.
  6. Remove the lemon from the chicken cavity, and squeeze the juice into the pan juices. Whisk together to create a light gravy – if you prefer a thicker gravy, reduce over a high heat.

Tong sui are a Cantonese specialty. If you've grown up in a Cantonese family, you must have had tong sui before. The term 'tong sui' literally means 'sugar water'. LOTUS ROOT SOUP V BLACK BEANS, WALNUTS & LOTUS SEEDS

My all time favorite: lotus root! This soup is said to be suitable for those with weak 'qi' & blood and blurry vision. It's also suitable to be taken during the confinement period as black beans can help replenish blood, promote secretion of breast milk and brighten eyesight. Yummy and nutritious. Ingredients: Approx 600g lotus root, washed and cut into pieces 1 tael (Approx 37.5g) black bean 1 tael (Approx 37.5g) walnut 5 maces (Approx 18.9g) lotus seed 5 maces (Approx 18.9g) dried longan  5 red dates, pits removed Approx 300g pork bones (For confinement, replace with 1 black-bone chicken) 2500ml water Scald pork bones in boiling water for 5 mins. Remove, rinse and set aside. Rinse and drain black beans. Heat a wok and fry the black beans without oil til the skin cracks. Set aside. Rinse remaining ingredients and set aside.
