Weather has been very hot lately, so I thought of boiling winter melon soup, which is cool in nature, clears heat and detoxifies. I looked up some recipes and found this soup that incorporates winter melon, Chinese mushrooms (nourishes spleen and stomach, enhances qi and improves appetite) and dried shrimps (rich in calcium, improve appetite and helps to expel phlegm). 

It is said to be suitable for those who are lacking calcium.

Ingredients:

  • Approx 50g  dried shrimp, rinsed to remove excess salt
  • 5 dried Chinese mushrooms, soaked
  • Approx 600g winter melon
  • 3 slices of ginger
  • 250-300g lean meat
  • 2500ml water
Dried shrimps taste fresh and sweet when cooked in soups.

  1. Remove seeds from winter melon and retain its skin. Wash it clean and cut into big pieces.
  2. Scald lean meat in boiling water for 5 minutes and rinse. Set aside.
  3. Put water and all ingredients in a pot. Bring to a boil over high heat. Turn to low heat and simmer for 3 hours. Serve.
