'CHICKEN CHOP' WITH MASHED SWEET POTATO AND VEGGIES

Ingredients:
- About 1/2 a chicken breast
- 2 tbsp frozen peas
- 2 tbsp diced carrots
- 2.5 oz homemade stock
- 2 slices yellow onion, finely chopped
- 1 small sweet potato, steamed
- Olive oil, for frying
- Italian herbs and black pepper, for seasoning
- Mash sweet potato with a fork and set aside.
- Fry the onions in a little olive oil til they are softened. Add the chicken breast and season with herbs and black pepper. Fry til browned on both sides or cooked thoroughly. Set aside.
- Pour stock into the same pan and bring to a boil. Add the diced carrots and peas and cook for about 8 minutes over low heat, or til tender. Season with black pepper and continue to simmer til sauce begins to thicken.
- Put the chicken breast, veggies and mashed sweet potato on a plate. Pour some leftover sauce over the chicken and serve. :)
