MINI PORK PATTIES V MASHED CHICKPEAS, CARROT & PEAR

Ingredients:
- 50g pork, minced
- 1 tsp bread crumbs with Italian herbs
- 1/4 cup cooked chickpeas, mashed
- 1/4 small carrot, cut into strips and steamed
- 2 slices pear, skin and core removed
- 2 slices yellow onion, finely chopped
- 3oz homemade stock
- Olive oil, for frying
- Butter, for pan frying
- Black pepper, for seasoning
- In a medium bowl, mix the minced pork with bread crumbs and season with black pepper. Form into 2 balls and flatten into patties.
- Melt the butter in a pan and add the pear slices. Spoon over the foaming butter to baste as you cook the pears. Pan-roast them on one side for 1-2 mins til they are golden brown around the edges. Then flip them over to cook the other side for another 1-2 mins. Remove and set aside.
- Heat oil over medium heat. Fry patties and onions in the oil til the patties are nicely browned on both sides. Remove patties and set aside.
- Turn heat to low. Gradually pour the homemade stock over the onions and drippings in the pan. Season with black pepper. Stir and simmer til gravy starts to thicken a little. (Optional: You may add some all purpose flour to thicken the gravy)
- Return patties to gravy, cover and simmer for a few more minutes til gravy thickens.
- Serve with mashed chickpeas, carrot and the pear slices. Enjoy!
