AMERICAN GINSENG SOUP WITH APPLE AND SNOW PEAR

Those who have to socialize extensively often suffer from unbalanced diet that leads to erratic metabolism that weakens the body. Here is a soup I came across that helps to calm upset stomachs resulting from irregular sleeping routine and relieves cough.


Suitable for those with weak stomach and bronchus

Ingredients:

  • 5 maces (Approx 18.9g) American ginseng
  • 3 apples, stems & cores removed and cut into pieces
  • 2 snow pears, stems & cores removed and cut into pieces
  • 1 mace (Approx 3.8g) Fritillaria bulb (Chuan bei)
  • 8 dried figs
  • 3 maces (Approx 11.3g) sweet almond
  • 2 maces (Approx 7.6g) bitter almond
  • 4 honey dates
  • Approx 300g lean meat
  • Water

  1. Rinse all ingredients and set aside.
  2. Scald lean meat in boiling water for 5 minutes, without cutting into pieces.
  3. Place all ingredients in a pot with 3000ml water. Bring to a boil over high heat. Then, turn to low heat and simmer for 3 hours.
  4. Turn off heat and season with salt (optional).
Naturally sweet in taste.
Tips:

American ginseng - clears heat and augments qi
Fritillaria bulb - expels phlegm and stops cough
Apple - promotes digestion.
Snow pear - moistens lungs and generates fluid for the body
Sweet and bitter almonds - stop coughs
Dried fig - strengthens spleen and lubricates intestines.
Honey date  - moistens lungs and expels phlegm

Tong sui are a Cantonese specialty. If you've grown up in a Cantonese family, you must have had tong sui before. The term 'tong sui' literally means 'sugar water'. CHINESE ARROWROOT SOUP WITH PORK BONES

This is the simple version of the Chinese arrowroot soup (Also known as 粉葛湯 'Fun Kot Tong' in Cantonese). Our family love drinking this soup. It is tasty and cooking it with pork bones and dried squid makes it sweet and refreshing. Some people who like boiling arrowroot together with lotus roots or peanuts, and my mother-in-law usually boils it on its own and drink as 'cooling' tea. Naturally sweet and tasty. If you don't like seafood, you can choose to omit the dried squid. This is how the Chinese arrowroot looks like.  The arrowroot is a type of root plant similar to taro, potato or tapioca. However, it is harder in texture and incredibly starchy. When it is cut up, it has patterns that looks like the ages of a tree trunk.
