Ingredients:
- 200g salted fish bones
- long beans, cut into 1.5 inch length
- cabbage
- 1 eggplant
- 5 lady fingers
- 1 pack of fish curry paste*
- 1 cup of thick coconut oil
- Oil, for frying
- Adequate water
- Scald all vegetables in boiling water and set aside.
- Heat up oil and stir-fry salted fish bones til fragrant. Dish out and set aside.
- Using the same oil, add in the curry paste* and stir-fry for a short while before adding the salted fish bones and water. Bring to a boil and simmer for 15 minutes.
- Add in the vegetables and coconut oil. Bring to a boil again and simmer for another 10 minutes. Serve.
*Note: This is for lazy people like me :P You can also make the paste yourself:
- 100g shallots
- 3 candlenuts
- 6 cloves garlic
- 2cm turmeric
- 1/2 tbsp belacan
- 1 tbsp curry powder
- 2 tbsp dried chili paste
- Salt and sugar to taste
