CONFINEMENT RECIPE: DOUBLE BOIL PIG TROTTER WITH DATES AND PEANUTS

Ingredients:
- 300g pig trotter, rinsed and cut into small pieces
- 25g red dates, washed and remove seeds
- 25g black dates, washed and remove seeds
- 40g peanuts (skinless)
- 1 tbsp Shaoxing wine
- 500ml boiling water
- Blanch trotters in boiling water for 5 minutes, rinse and set aside.
- Blanch peanuts in boiling water, remove and drain well.
- Place dates, trotters and the rest of the ingredients into a double boiler. Pour in boiling water, cover and double boil over low heat for 2 1/2 hours.
- Remove from heat and serve immediately.
