CONFINEMENT RECIPE: DOUBLE BOIL PIG TROTTER WITH DATES AND PEANUTS

Another one of my favorite confinement recipes :)

Ingredients:

300g pig trotter, rinsed and cut into small pieces
25g red dates, washed and remove seeds
25g black dates, washed and remove seeds
40g peanuts (skinless)
1 tbsp Shaoxing wine
500ml boiling water

Blanch trotters in boiling water for 5 minutes, rinse and set aside.

Blanch peanuts in boiling water, remove and drain well.

Place dates, trotters and the rest of the ingredients into a double boiler. Pour in boiling water, cover and double boil over low heat for 2 1/2 hours.

Remove from heat and serve immediately.
