Fermented black beans, also called salted black beans, are a popular flavoring in Chinese cuisines. Made from soybeans that have been dried and fermented with salt, the smell is sharp/pungent, and the taste is salty, somewhat bitter and sweet. Because of their strong flavor, fermented black beans are frequently paired with other strong seasonings, such as garlic and chilies.

Ingredients:
- 8 pcs large prawns
- 10g spring onion and some extra for garnishing, sliced
- Oil, for frying
Fermented Black Bean Sauce:
- 20g ginger, finely chopped
- 20g onion, finely chopped
- 20g garlic, finely chopped
- 1 red chili, deseeded (I used chili padi :P)
- 30g fermented black bean
- 1 tbsp sesame oil
- 1 tbsp Chinese cooking wine (Hua Diao Jiu)
Seasonings:
- 1.5 tbsp oyster sauce
- 1 tbsp brown sugar
- Salt to taste
- Pepper to taste
- Pan-fry the prawns in hot oil til almost cooked. Remove and set aside.
- Heat oil, stir-fry ginger, onion, garlic, chili and fermented black beans over low heat til fragrant.
- Add seasonings and salt + pepper to taste. Drizzle sesame oil and Chinese cooking wine.
- Add prawns and stir-fry evenly.
- Lastly, add spring onion and stir well.
- Garnish with some spring onion and serve.
