BRAISED CHICKEN WINGS WITH CHESTNUTS AND MUSHROOMS

Ingredients:
- 2 pairs of chicken wings, cleaned and separated into drumettes and wingettes
- 6 dried shiitake mushrooms, soaked
- 6 chestnuts, boiled and peeled
- Ginger, matchstick strips (julienne)
- 1 tbsp Chinese cooking wine
- 1 tbsp cornstarch
- 1 tbsp oyster sauce
- Salt
- Sugar
- Oil, for frying
- Water
- Marinade the chicken wings with cooking wine, cornstarch and salt. Set aside for about 10-15 minutes.
- Heat oil and saute wings until both sides are lightly brown. Set aside.
- In the same wok, add oil and stir-fry ginger and soaked mushrooms til fragrant. Toss in the chestnuts and wings. Fry til cooked.
- Add in adequate water, oyster sauce, salt and sugar. Bring to boil and simmer for 10-15 minutes. Serve hot.
