STEWED CHICKEN WITH RED DATES AND TWIN MUSHROOMS

Ingredients:
- 1/2 chicken, cut into pieces
- 8 dried shiitake mushrooms, soaked
- 1 can of button mushrooms
- 8 red dates, washed and remove seeds
- 2 garlic cloves, minced
- 4 slices of ginger
- Cooking oil, for frying
- Water
Seasoning:
- 2 tbsp of chinese cooking wine (Shao Xing Hua Diao Jiu)
- 1 tbsp brown sugar
- 1/2 tsp salt
- 2 tbsp oyster sauce
- 1/4 tsp pepper powder
- Heat oil, fry garlic, ginger and soaked shiitake mushrooms til fragrant.
- Add chicken and fry til half-cooked.
- Add button mushrooms and red dates. Fry evenly.
- Add seasonings and fry til well combined.
- Pour water and stew over medium heat til almost dried.
